Cooking Meat: Protein Changes (Coagulation, Gelatinization and Tenderization)

Coagulation

Coagulation is the process by which proteins in meat change structure and form a solid or gel-like substance when exposed to heat. Meat contains myofibrillar proteins (actin and myosin, responsible for texture), sarcoplasmic proteins (like myoglobin, responsible for colour), and connective tissue proteins (collagen, which can turn to gelatin when cooked).

When meat is heated, protein molecules denature (unfold) and then coagulate (re-bond), making the meat firm. Different proteins coagulate at different temperatures — myosin around 50°C, while collagen needs higher temperatures (around 70°C) and longer cooking to convert to gelatin. As proteins coagulate, the meat contracts and loses some moisture, which can cause dryness if overcooked.

Coagulation also drives the Maillard reaction — a chemical reaction between amino acids and sugars that gives browned meat its complex flavour and aroma — and contributes to caramelization at high heat.

Gelatinization

Gelatinization refers to the transformation of collagen into gelatin during cooking. Collagen is a structural protein in connective tissue that provides strength; when heated over time (roughly 60-90°C) with moisture present, it breaks down (hydrolyses) into gelatin, which is soluble in water and gives meat a tender, moist texture.

Slow cooking methods — braising, stewing, slow roasting — are most effective for gelatinization, since they allow ample time for collagen to break down. Cooking with liquid (broth, water, or an acidic ingredient like vinegar or tomatoes) speeds up the process. Tough cuts with high collagen content, such as shank or brisket, benefit the most, becoming tender and flavourful dishes like a rich meat stew.

Tenderization

Tenderization is the process of making meat more tender, improving its texture and eating quality. Methods include:

  • Mechanical: pounding with a mallet, needling, or cubing the meat to physically break down muscle fibres and connective tissue.
  • Chemical: marinating in acids (vinegar, citrus) or enzymes (from pineapple or papaya), or using a commercial meat tenderizer, to break down proteins.
  • Thermal: slow cooking or sous vide, using low, controlled heat over an extended period to break down collagen.
  • Natural: aging the meat under controlled conditions to naturally break down connective tissue and enhance flavour.

Tender cuts (like fillet) have less connective tissue and need little tenderizing, while tough cuts (like chuck or brisket) benefit most from these techniques. Tenderizing improves texture, helps meat absorb marinades and seasonings better, and can shorten cooking time.
