- Heat processing: pasteurization (heating liquids like milk to kill harmful microorganisms) and sterilization (destroying all microorganisms, as in canning).
- Cooling and freezing: refrigeration slows microbial growth; freezing preserves food for long periods.
- Drying: removing moisture to prevent spoilage, through air drying, freeze-drying, or spray drying.
- Fermentation: using microorganisms to enhance flavour and preserve food, such as in yoghurt or fermented cassava (garri, water fufu).
- Chemical preservation: using preservatives, antioxidants, and antimicrobial agents to extend shelf life.
Value-added processing includes preparing ready-to-eat or easy-to-prepare foods, packaging (protecting food and providing ingredient/nutrition labelling), and quality control (testing for safety and consistency, and complying with food safety standards).
